The boutique wine label, Gilbert, is handcrafted by Simon and Will Gilbert who come from six generations of winemakers. As artisans of elegant cool climate wines, their ethos is simple, wise winemaking with fresh appeal.
The Cellar by Gilbert is their tasting room. They offer both current and museum releases, local charcuterie, High Valley cheeses and tailor made wine masterclasses led by their knowledgeable team. They also feature wines from family, friends and mentors from around the world who have contributed to the Gilbert story.
Wine Bar: Friday + Saturday Nights
On Fridays + Saturdays the Cellar by Gilbert's opening hours extend to 10pm.
Pip’s new wine bar menu will kick off at 6pm both evenings, with food available until 9pm.
There'll also be live music each week.
Food Over Fire
Our long lunch ‘Food over Fire’ takes place each Saturday (April till October). Lunch is set around a large, communal farmhouse-style table and brings you closer to the Mudgee region’s producers by indulging in a true ‘farm to table’ experience. Grab a glass of Gilbert wine, Goose cider or Yulli’s craft beer and head up to watch Pip cook your lunch over the fire-pit. Bookings are essential as numbers limited.

The Cellar by Gilbert offers masterclasses 7 days per week. They cost $45 per person and include a cheese & meat platter, an in-depth tasting and a flight of 5 wines. Bookings essential.
